About the role

Marina Bay Sands is looking for an F&B Sous Chef for the Paiza Club. Responsibilities include supporting the Executive Chef, managing administrative duties, assisting with menu preparation, ensuring food quality and safety standards, and training culinary staff.

Key Responsibilities

  • Support the Executive Chef in ensuring smooth daily operations.
  • Manage administrative duties: team members, payroll, records, scheduling, purchase requests.
  • Assist in menu preparation, recipe cards, and plating guides.
  • Ensure food quality and safety standards are met.
  • Monitor food production for compliance with recipes and specifications.
  • Provide training to line cooks on recipes and food preparation.

Requirements

  • Diploma/Degree in Culinary Arts/Pastry or related field preferred.
  • 7 years managerial experience in a high-volume 4-5 star hotel/restaurant.
  • Comprehensive and diverse culinary background.
  • Knowledge of Asian/Western/Italian/Japanese cuisines.
  • Knowledge in using computers for administration work.
  • Able to instill safety and sanitation habits.
